正黃家綠豆蒜 Mung Bean Garlic

去了殼後的綠豆,形狀很像剁碎的蒜末,所以稱為綠豆蒜。

恆春傳統吃法,可是熱熱的吃呢!加上黑糖與桂圓熬煮,在白米昂貴的年代,是能增加飽足感的點心做法。而淋上自家熬製的黑糖漿,再加上豐富佐料的冰涼吃法,也是大受歡迎。

Mung Bean Garlic gets its name from the fact that fully-cooked dehulled mung beans look very much like finely-chopped garlic. Dried longan fruit and brown sugar are added to make this delightful dish more filling. The recipe being a remnant from a time when rice was an expensive luxury. Though it’s a tradition in Hengchun to enjoy sweet mung bean hot, another popular option is to serve it on ice with homemade brown-sugar syrup as a host of other delicious toppings.

熱冰Hot Shaved Ice

一顆顆渾圓飽滿的湯圓,拌上熬煮軟嫩的配料,再用細緻的雪白冰花包覆,最後淋上香氣濃郁的黑糖水,不要攪拌,由邊下往上吃,便能感受冷熱交融的特殊口感。

Imagine full, round and delectably chewy sticky rice balls ("tangyuan"), along with other tender and scrumptious cooked ingredients, all covered with silky snowflake shaved ice and topped with tasty brown sugar syrup. If you can, resist stirring this heaven-in-a-bowl and rather start from the bottom then work your way up. That way, you can savor both hot and cold melting in your mouth with every bite.

來自屏東的可可 Pingtung Cacao

屏東的氣候高溫多濕,很適合種植可可。日治時期日本人曾經從印尼將可可引進臺灣試種,可惜當時因加工技術無法突破而逐漸沒落。

直到10多年前,內埔地區農民邱銘松先生首次自國外引進可可,並成功以規模化方式種植,同時也是臺灣第一位成功加工製造巧克力的先驅。隨著邱銘松先生的成功,而後內埔、萬巒地區等業者陸續跟進,成為屏東可可產業近代興起的起源。(延伸閱讀:屏東在地經營一條龍,村民協力實踐可可夢

屏東縣政府近年輔導可可產業,由種植到加工至巧克力品牌行銷,形成一串完整的產業鏈,奠定屏東成為臺灣巧克力故鄉之印象。臺灣可可也屢屢在世界巧克力大賽中奪下獎牌,向世界展現「屏東可可‧臺灣巧克力」的品牌實力。(延伸閱讀:2018世界巧克力大賽亞洲最大贏家,藏身南台灣的「福灣巧克力」

The hot and humid climate in Pingtung makes it ideal for growing cacao. It was during the period of Japanese occupation that visiting officials first tried to plant cacao seeds brought over from Indonesia. Processing techniques at the time, however, were sadly not sophisticated enough to ensure an agricultural breakthrough, and the practice gradually declined.

This continued until just over a decade ago when local Neipu farmer, Qiu Ming-song, first succeeded in cultivating cacao on a larger scale after introducing personally-obtained foreign cacao seeds. Mr. Qiu was also the first to pioneer successful chocolate production in Taiwan, leading the way for other producers in the Neipu and Wanluan areas and sparking the industry’s recent rise.

Support from the local Pingtung County government has further assisted this growth, helping not only to ensure a healthy and fully developed bean-to-bar supply chain, but also to establish Pingtung as the home of Taiwanese chocolate. The latter has since snagged numerous awards in various international competitions, thereby firmly placing Pingtung cacao and Taiwan chocolate on the world map.
